Andalusian soup

Serves 6


2 leeks


2 onions


2 stalks celery


2 carrots


thyme, bay leaf, salt, pepper


a bone marrow


2 red peppers


70 g of tomato paste


Parsley



Preparation



Make broth: water + vegetables (leeks, onions, celery, carrots, bones marrow) and bake 1 hour 30 minutes.



Strain the broth, add the julienned peppers, tomato paste and cook + / - 10 minutes



Mix the soup, adjust seasoning and serve garnished with chopped parsley



For the greedy, a little cream does not hurt ...
